Happy 9th Birthday,,,

 Hannah Grace Earls.  So glad you had a great time on our outing for your birthday.  :)

For this picture, Hannah and I were headed to eat lunch when we came across this huge train track.  I pulled over for us to take pictures.  Hannah was so very embarrassed because she thought someone was gonna see us.  lol

It's just so hard for me to accept that my baby girl, Hannah will b nine in 2 days.  :(  What am I gonna do about this?

Catch-up time!!

Ok, so!! Got a lot to catch~up on. Ive started a new position @walmart. Actually it isn't new I'm just back in the deli. :)). Absolutely LOVING it is an understatement! :) I'm LOVING sleeping in passed 4am, I'm LOVING being at home during the day with my sweet girls, I'm lOVING that I don't feel like I'm always at work. I have a part-time job and I now feel it. :)). Yeah! Haha!

My husband is sooo wonderful!! I asked for a Cricut machiene or Christmas but wasn't able to afford it. Needless to say I got my Valentines Day preset early....A beautiful black Cricut expressions. :))) Boy am I on cloud 9. Joe played around with it last night and cut out a K for me! Isn't that sweet??? I am so inlove with this man. :). He's definitely a GOD sent blessing to me. :)

Even though Iwas so excited to have gotten my Cricut in the mail yesterday, it turned into an AWFUL day! I will go into more details layer but for now just know I'm devistated, mad, pissed, beyond heartbroken!!! Please lift my family up in your prayers.

Monday, January 23, my sweet baby bug Hannah will b 9 years old! WOW...Where has the time gone?? I remember Mama telling me that when school was over that day for us all, Granny, Bit, Cricket,Jason, and I to come to the hospital. Victoria and I called Granny to check us out of school that way we could leave earlier to go to the hospital. She did. Needless to say my mama was sooo mad. Haha! She got over it real quickly. :). For the past 2 years, Hannah's request for her birthday was to go eat Kobe, Japanese, and to go shopping at Justice. This year Hannah's request was to go eat Kobe and go to the movies and watch the newest movie, Joyful Noise. So that's where we're at! Yes I'm sitting here during the movie writing my blog. I can multitask. Lol. Also today, we went and took some pictures at a railroad track and at the park where the Bama Belle boat is. Good pics. :). Will post sometime soon. Hope u all have a great day!

Strawberry Banana Pizza




Strawberry Banana Pizza
Spread out sugar cookie dough on a pizza pan and bake.
Mix 2 pkgs of cream cheese and 1 cup of sugar (or more if you like it sweet) and spread on cookie once cool.
Slice strawberries and bananas and spread on top and then top with cool whip.
Easy and yummy!

Sausage Balls

1 lb sausage (Jimmy Dean in the tube)
2 cups Biscuik
10 oz shredded cheese

Put everything in a bowl and mix well. It's easiest to do with your hands. Roll into balls. Bake at 350 for 20-30 minutes (or browned well)

Beef Enchiladas

1 lb hamburger meat
1 small onion, chopped
1 can of chopped black olives
1 can of cream of mushroom soup
1 can of Enchilada sauce
8 oz of shredded cheddar cheese
6-8 flour tortillas

Brown the meat and saute the onions in with it. Once that is done, add in the olives and let it heat and then add in 3/4 of the cheese and let it melt - mix it all together. Fill tortillas with the meat mixture and roll up. Combine the mushroom soup and enchilada sauce and pour on top. Top with remaining cheese. Bake at 350 for 30-40 minutes.

How do you make your burgers?

My favorite way is to take 2 lbs of lean ground beef and mix it with a package of Onion soup mix and a few tablespoons of worchestershire sauce. It gives burgers such a great flavor.

Chicken Enchilada Ring


Chicken Enchilada Ring


Ingredients:

2 cups cooked chicken
1 cup cheddar cheese
1 small can chopped chilies, undrained
1/2 cup sour cream
1 package taco seasoning
2 rolls of crescent rolls
1 small chopped tomato
1 lime (juice)
2/3 cup finely crushed tortilla chips


Directions:

1. Chop chicken and add cheese, chilies, sour cream and taco mix. Seed and chop 1 tomato and add 2 tablespoons lime juice; add to chicken mixture. Reserve 2 Tblsp. crushed chips and add remaining chips to mixture.


2.Unroll crescent dough and separate triangles. Arrange on round baking stone or cookie sheet making a circle with wide ends OVERLAPPING in the center and points toward outside. ( I did lightly spray oil on the cookie sheet I used). There should be a 5 inch diameter opening in the center.

3. Spread chicken mixture evenly onto widest end of each triangle.

4. Bring points of triangles up and over filling and tuck under wide ends of dough at the center of the ring.

Sprinkle with 2 Tblsp. crushed chips. ( I put shredded cheese all on top!)

5. Bake @ 375 for 20-25 minutes. Garnish with tomato and serve with salsa and sour cream.

Coconut Cake..



I have found a new found love for a Coconut cake.  YUMMO!!!  Here is a recipe a friend has given to me.  


Ingredients:
Yellow Cake Mix
2 cups of sugar
8oz sour cream
lg tub cool whip
lg bag of coconut


Bake the cake mix according to the box. Mix the 2 cups of sugar and sour cream together and set in freezer until everything is done.  When the cake is cool, mix cool whip and 1/2 bag of coconut with the mixture in freezer.  Spread mixture over cake.  Keep refrigerated. SO, SO good!
