Happy 9th Birthday,,,

 Hannah Grace Earls.  So glad you had a great time on our outing for your birthday.  :)

For this picture, Hannah and I were headed to eat lunch when we came across this huge train track.  I pulled over for us to take pictures.  Hannah was so very embarrassed because she thought someone was gonna see us.  lol

It's just so hard for me to accept that my baby girl, Hannah will b nine in 2 days.  :(  What am I gonna do about this?

Catch-up time!!

Ok, so!! Got a lot to catch~up on. Ive started a new position @walmart. Actually it isn't new I'm just back in the deli. :)). Absolutely LOVING it is an understatement! :) I'm LOVING sleeping in passed 4am, I'm LOVING being at home during the day with my sweet girls, I'm lOVING that I don't feel like I'm always at work. I have a part-time job and I now feel it. :)). Yeah! Haha!

My husband is sooo wonderful!! I asked for a Cricut machiene or Christmas but wasn't able to afford it. Needless to say I got my Valentines Day preset early....A beautiful black Cricut expressions. :))) Boy am I on cloud 9. Joe played around with it last night and cut out a K for me! Isn't that sweet??? I am so inlove with this man. :). He's definitely a GOD sent blessing to me. :)

Even though Iwas so excited to have gotten my Cricut in the mail yesterday, it turned into an AWFUL day! I will go into more details layer but for now just know I'm devistated, mad, pissed, beyond heartbroken!!! Please lift my family up in your prayers.

Monday, January 23, my sweet baby bug Hannah will b 9 years old! WOW...Where has the time gone?? I remember Mama telling me that when school was over that day for us all, Granny, Bit, Cricket,Jason, and I to come to the hospital. Victoria and I called Granny to check us out of school that way we could leave earlier to go to the hospital. She did. Needless to say my mama was sooo mad. Haha! She got over it real quickly. :). For the past 2 years, Hannah's request for her birthday was to go eat Kobe, Japanese, and to go shopping at Justice. This year Hannah's request was to go eat Kobe and go to the movies and watch the newest movie, Joyful Noise. So that's where we're at! Yes I'm sitting here during the movie writing my blog. I can multitask. Lol. Also today, we went and took some pictures at a railroad track and at the park where the Bama Belle boat is. Good pics. :). Will post sometime soon. Strawberry Banana Pizza




Strawberry Banana Pizza
Spread out sugar cookie dough on a pizza pan and bake.
Mix 2 pkgs of cream cheese and 1 cup of sugar (or more if you like it sweet) and spread on cookie once cool.
Slice strawberries and bananas and spread on top and then top with cool whip.
Easy and yummy!

Sausage Balls

1 lb sausage (Jimmy Dean in the tube)
2 cups Biscuik
10 oz shredded cheese

Put everything in a bowl and mix well. It's easiest to do with your hands. Roll into balls. Bake at 350 for 20-30 minutes (or browned well)

Beef Enchiladas

1 lb hamburger meat
1 small onion, chopped
1 can of chopped black olives
1 can of cream of mushroom soup
1 can of Enchilada sauce
8 oz of shredded cheddar cheese
6-8 flour tortillas

Brown the meat and saute the onions in with it. Once that is done, add in the olives and let it heat and then add in 3/4 of the cheese and let it melt - mix it all together. Fill tortillas with the meat mixture and roll up. Combine the mushroom soup and enchilada sauce and pour on top. Top with remaining cheese. Bake at 350 for 30-40 minutes.

How do you make your burgers?

My favorite way is to take 2 lbs of lean ground beef and mix it with a package of Onion soup mix and a few tablespoons of worchestershire sauce. It gives burgers such a great flavor.

Chicken Enchilada Ring


Chicken Enchilada Ring


Ingredients:

2 cups cooked chicken
1 cup cheddar cheese
1 small can chopped chilies, undrained
1/2 cup sour cream
1 package taco seasoning
2 rolls of crescent rolls
1 small chopped tomato
1 lime (juice)
2/3 cup finely crushed tortilla chips


Directions:

1. Chop chicken and add cheese, chilies, sour cream and taco mix. Seed and chop 1 tomato and add 2 tablespoons lime juice; add to chicken mixture. Reserve 2 Tblsp. crushed chips and add remaining chips to mixture.


2.Unroll crescent dough and separate triangles. Arrange on round baking stone or cookie sheet making a circle with wide ends OVERLAPPING in the center and points toward outside. ( I did lightly spray oil on the cookie sheet I used). There should be a 5 inch diameter opening in the center.

3. Spread chicken mixture evenly onto widest end of each triangle.

4. Bring points of triangles up and over filling and tuck under wide ends of dough at the center of the ring.

Sprinkle with 2 Tblsp. crushed chips. ( I put shredded cheese all on top!)

5. Bake @ 375 for 20-25 minutes. Garnish with tomato and serve with salsa and sour cream.

Coconut Cake..



I have found a new found love for a Coconut cake.  YUMMO!!!  Here is a recipe a friend has given to me.  


Ingredients:
Yellow Cake Mix
2 cups of sugar
8oz sour cream
lg tub cool whip
lg bag of coconut


Bake the cake mix according to the box. Mix the 2 cups of sugar and sour cream together and set in freezer until everything is done.  When the cake is cool, mix cool whip and 1/2 bag of coconut with the mixture in freezer.  Spread mixture over cake.  Keep refrigerated. SO, SO good!

Bringing in the new year with my sister and her family. :)). We had one delicious meal. Brother~in~law cooked ribeye steaks, twice baked potatoes, stuffed jalapeƱo peppers, bread, and a good ole diet mtn dew. :)). I'm posting this blog from my iPhone 4 and for some reason it won't let me add pics/videos. :(((. I will add those later on tomorrow. I hope everyone has a safe and wonderful New Years. :))

The end of 2011....WOW!!!

The end of 2011....WOW!!!  Who would have thunk it would have happened soooo fast??  I can't believe it.  Today I was off work..YEAH!!! I received a disturbing phone call from my youngest niece Hannah.  She was telling me her mother had just been attacked by their English Bulldog Sam.  She was hysterical screaming come fast KK.  I get up and get my clothes on and off I go.  I get there and both girls are standing outside crying.  Jessica is in the den in the floor crying.  She goes into telling me the story of what happened and then shows me the damage.  Her legs were scrapped up pretty bad and her hand looked as if it had a hole in it.  Her husband returned home soon and thought she didn't need to go to ER.  When Mama got there she thought she atleast needed to go for nothing else but a tetnis shot.  WOW...This day started out pretty rough.  lol

On a brighter note, Jeslyn and Hannah came home with me as planned.  Jeslyn cooked us some pigs n a blanket for lunch and Hannah baked us some sugar cookies.  Of course I helped a little but they done the majority of the work.  :)  My babies are getting WAY to big.  :(  Girls and I laid around and watched tv and ate all day.  Nothing but making small talk and memories.  What a way to spend the day.  The girls and I decided to go outside and clean my car.  All 3 of us got a bag and got all the trash out then brought other stuff in the house.  I pulled it around to the water hose where we could hand wash it.  Hannah got inside armoralled  the interrior while Jeslyn and I had a bowl of car wash and went to town on the outside.  Bout half way through their parents came to pick them up.  Needless to say I had to finish it all by myself.  BOOHOO!!  HAHA.  Oh well.

After cleaning my car, I decided to come in, dress my girls up, and take them for a walk.  We didn't get to walk much because it was to cold but they got a little excercise and fresh air...which is the point!!   :)))

You know I couldn't take a nature walk and NOT take a picture of these beautiful girls.  RIGHT???  HAHA!

When Joe got home this afternoon it was time to tackle the tanning bed bulbs again.  In the midst of putting the acrilic back in Joe accidentally cracked it.  :((  Hurt my feeling but accidents happen.  He didn't mean to and felt really bad afterward.  Oh well....Atleast it was the top and not the bottom.  If it had been we would have had a problem.  lol

Happy Hubby...



My wonderful hunny got his late Christmas present today.  It's a yellow DELL laptop.  He has been wanting one for some time now where we will both have our own.  I found this on the Tuscaloosa Trader for VERY cheap.  Bought it and surprised him.  Boy was he a happy camper.  :)

CHRISTmas 2011.. PT. 2

After Joseph and I gave Maggie and Sophia their stockings it was then time to clean up and start cooking for the gathering at my sisters that afternoon.  I made stuffed eggs, strawberry dessert, and pumpkin bread.  Yummy. 
Recipe:
1 frozen large pound cake
2 (8oz) containers of cool whip
2 cans of Strawberry pie filling
Directions:
Layer in a beautiful bowl as much as you would like.....ENJOY!!
Pretty simple but elegant looking and full of flavor.  :)
Finished masterpiece...HAHA!

When we got to my sisters house the girls couldn't wait to get into their gifts.  :)  Mama and Jessica were in the kitchen cooking so we had to wait on them to find a stopping point.  :)  

This is a pic of my sisters tree and the gifts Joe and I bought for everyone.  :)  We were so blessed to have been able to get everyone something.

Jeslyn got the first gift.  A towel to go with the new bathroom set they were about to open.

Hannah opened the soap pump and the tooth brush holders.  

I made them open this bag together.  They were both sooo excited but Hannah was most excited about it.

Next came the BIG kids.  lol  Michael got bath stuff, razor, shave cream set.

Mama loved her coffee cup I had made for her.  It was pictures I had taken of all the grandkids.  It was so pretty.  She also got Tupperware salt and pepper shakers, and a set of Tupperware bowls.

Ricky got bath set.

Jessica got 3 Home Interriors pictures, Tupperware Salt and Pepper shakers, Tupperware Colander, and a ser of candle stick holders.

After  we opened gifts it was time to GRUB.  HAHA!!!  We LOVE to eat.  We had cajun fried turkey, baked ham, peas, turnip greens, mac n cheese, stuffed eggs...I don't even remember what all but it was a bunch.  lol  While the "women" cleaned up the kitchen, Hannah and I took off on an adventure to take pictures.  On the way to our destination, we about got attacked but a huge dog with broad sholders.  Needless to say I FREAKED OUT!  lol  Hannah started to run and I was scared the dog was gonna go off after her.  I am so glad to say we freaked out for nothing because the dog was inside an underground shock fence.  I didn't know that until the neighbor came out and told us.  lol
We went on to take pics.  Here is just a few I snapped.  I put them in a collage for her.

She done a great job posing for these pictures.  My hannah bug used to be such a tomboy but has recently turned into a little young lady.  :)  Boy do I miss the baby bug though.

CHRISTmas 2011.. PT. 1

Gonna update you on what's been going on here since my last post.  Several friends of mine got me a little gift for Christmas this year.  One of which I'm soo excited about was these precious little ornaments made for my sweet girls.

How adorable are they.  She wrote on the backs of them to.  Very sweet and thoughtfull of her.  Also, another one of my friends gave me a beautiful T ornament and a Celebrating Homes Baked Apple Candle.  :) I love it.



Maggie and Sophia got a new outfit to wear for Christmas.  Maggie got a dress and Sophai got this adorable sweater.  It's got a santa on the back.  So cute.  




One of my best Friends little girls 3rd Birthday was on the 18th.  She is just adorable.  I got the honor of taking a few pics of her during her big day.

CHRISTmas EVE....

It is FINALLY  CHRISTmas time for 2011.  WOW am I wore slap out. Joseph and I went to his brothers house to have Christmas with them on Christmas eve.
Joseph and I got his son a Xbox 360 with Kinnect.  He was super excited to receive this.  I love this little boy more than anything else.  He's the spitting image of his father and I love it.

CHRISTmas Day!!!!

I know it's sad, but I didn't dress up for Christmas day.  I was just sooo sleepy and tired and since this was my only day off work for Christmas, I played it LAZY...HAHA!  Joseph and I got up and went over to my sisters to watch Jeslyn and Hannah open their Christmas.
